
One of the most delicious eggplant compounds you can try while your travel to Iran is Halim Bademjan which could be served as a meal or a starter.
This dish is a very popular local food of Isfahan specialy in month Ramathan, although you can find it anytime in special shops while your travel to Isfahan.

Halim Bademjan consists of eggplant, beef neck meat, rice, Kashk (whey), onions, turmeric, salt, black pepper powder, crushed mint and Persian mixed spice (Advieh).
In a brief, the peeled sliced eggplants is fried in a pan. In the meantime the beef neck meat is cooked slowly in boiling water with the spices and fried onions. When the meat is cooked, it is smashed until the color changes to white. Next the Kashk (whey) is mixed with brewed saffron.

Then the whole things is mixed together in a pot to be stirred and mashed.
Finaly Halim Bademjan is ready to design with fried crushed mint and Kashk (whey) in a plate or bowl.
